This is a eggplant open face sandwich I made this weekend. I browned the eggplant in a pan with some olive oil, then put it on some Italian bread with that was starting to get a little stale and topped with shredded Monteray Jack and onion. I put the oven on broil and let the cheese get all melting and the edges of the bread get brown. Then finished it off with a drizzling of spicy mustard and some grated parmesan.
